Easy to make: Strawberry Dessert with Silken Tofu

Finally the berry season is starting here! The first ones are always the strawberries and for me, regional berries always taste so much better. And: strawberries are also a perfect superfood like all red and dark berries. Their red plant pigments are powerful antioxidants which strengthen the immune system and protect our cells against damage and aging. Strawberries also contain a lot of vitamine C which makes them a wonderful detox food as well.

I made this dessert with strawberries and silken tofu because this kind of tofu is perfect for vegan smoothies or desserts. And to make the preparation of this dessert even easier I used bought cookies for the bottom layer. Of course you can also use homemade cookies or granola.

Vegan Strawberry Dessert with Silken Tofu

Serves 2

  • 1 small organic lemon
  • 300 g silken tofu
  • ½ tsp ground vanilla
  • 2 tbsp agave or maple syrup
  • 4-6 chocolate cookies (depending on their size)
  • 200 g fresh strawberries
  • 1 tbsp pistachios
  • some lemon balm leaflets

Rinse the lemon under hot water and let it dry off, then grate the zest. Mix it with silken tofu, vanilla and the sweetener in a blender until it is creamy. Do not blend to long, so that the cream does not become too thin.

Put the cookies in a small lockable plastic bag and break them into crumbs with a heavy item like a pestle. Fill the crumbs into two jars or glasses.

Wash the strawberries, remove the stems. Cut 2-4 berries in thin slices and place them on the inside of the jars so that they „stick“. Fill the tofu cream into the jars – but not up to the brim.

Put the jars in the fridge for 1-2 hours until the cream is cool and firm again. Quarter the remaining berries and chop the pistachios roughly. Garnish each jar with berries, nuts, lemon balm and optionally more agave or maple syrup. Enjoy!
